Larger bean sprouts are a different case. Mung beans and soybeans are often kept dark throughout their cycle because light can make them greener and more leaf-like than the classic bean sprout texture most people expect. Lentils, chickpeas, and peas can be eaten as short sprouts without much concern for light, although they can also be grown longer as shoots with a different method.
