Lentils are especially forgiving, though they do not need an extended soak. Fenugreek can develop a naturally strong, slightly bitter aroma as it grows. That does not automatically mean there is a problem, but a sharp sour or rotten smell is a reason to discard the batch.

Large or firm seeds: 8 to 12 hours

Chickpeas, peas, wheat berries, spelt, and larger beans usually need 8 to 12 hours. Their larger size and firmer seed coats mean that a shorter soak can lead to inconsistent germination, with some seeds growing while others remain hard and dormant.

For pea shoots, the soak is particularly useful because it helps produce a more uniform tray. Aim for about 8 hours first.
